QUICK TIP

Any dense fatty fish will work for this recipe. Try salmon or sea bass.

Equipment Needed

Measuring cups and spoons, knife, cutting board, mixing bowl, parchment paper, aluminum foil and a baking sheet

Instructions

Preheat the oven to 400°. 

Chop the vegetables into 1” slices and place them into a bowl.

Add the avocado oil and season with salt and pepper to taste. Mix thoroughly.

Lay out 2 pieces of foil about 24” long, followed by 2 pieces of parchment paper the same size.

Pour the vegetables into the middle of the parchment paper and keep them in a tight, small pile.

Place the halibut fillets on top of the vegetables and season with salt, pepper and lemon zest.

Add 1 teaspoon of garlic butter on top of each piece of fish.

Fold the parchment paper into a tight bundle. Repeat this method with the aluminum foil.

Transfer the pouch onto a baking sheet and bake in the oven for 25 minutes.

When done, remove the fish and vegetables from the package and drizzle any remaining melted butter on top of the fish before serving.
