Make all 4 sandwiches ahead of time and then use the panini press to order.

Equipment Needed

Measuring cups and spoons, thick bottomed pot, knife, cutting board panini press or grill pan and an immersion blender


To make the tomato basil soup, add the olive oil and garlic butter to a thick bottomed pot over medium heat.

Add the carrots, celery and onion mix and sauté for 5 minutes.

Sprinkle in the quinoa flour and cook for an additional minute.

Add the broth, strained tomatoes and fresh basil.

Let simmer for 15 minutes then purée smooth with an immersion blender.

To make the turkey pesto panini, start by turning on the panini press.

Spread pesto on each side of the bread. Add a slice of provolone, turkey, arugula, tomato and a second slice of provolone.

Spray the press with coconut oil spray.

Press your sandwich until it becomes golden and toasty and the cheese has melted (approximately 5 minutes). 

Serve with the tomato basil soup and enjoy!
