Use rolled oats if you don’t have quinoa flakes.

Equipment Needed

Measuring cups and spoons,large sauté pan, knife, cutting board, parchment lined baking sheet, large bowl, small sauté pan, whisk and a spatula

Instructions

Preheat the oven to 375°.

Dice the carrots, celery, onion and pepper into small pieces. Mince the garlic and chop the parsley. 

In a large sauté pan over medium-high heat, add the butter and olive oil.

Add the carrots, celery, onion and red pepper and sauté for 5 minutes. 

Add the garlic, worcestershire sauce and the parsley.

Sauté for 3 additional minutes, remove from the heat and let cool. 

Transfer the sautéed vegetables into a bowl and add the ground beef, ground pork, quinoa flakes and the egg.

Mix thoroughly to combine, and form the mixture into a log on a parchment lined baking sheet. The meatloaf should be approximately 12” long.

Roast in the oven for 45 to 60 minutes, or until an internal temperature of 165° has been reached.

In a small sauté pan over medium heat, combine the ketchup, maple syrup, soy sauce and Frank's RedHot. Whisk thoroughly to combine. 

When the meatloaf has 10 minutes remaining, remove it from the oven and pour the glaze all over it. 

Use a spatula to ensure it’s evenly coated everywhere. Return the meatloaf back to the oven for 10 minutes.

When done, let cool for 15 minutes, slice into eight portions, serve and enjoy!
