Let cool to room temperature before serving so they don’t fall apart.

Equipment Needed

Measuring cups and spoons, parchment lined baking sheet, mandolin slicer or a knife and cutting board and a spoon


Preheat the oven to 375°.

Thinly slice the zucchini with a knife or on a mandolin slicer.

Lay the zucchini slices out on a parchment lined baking sheet, spray with coconut oil and season with salt and pepper to taste. 

Place the baking sheet into the oven and bake for 25 minutes. 

Remove the zucchini slices from the oven and place 1 teaspoon of pizza sauce on each of the rounds.

Top with 1 teaspoon of shredded cheese on each.

Place the baking sheet back in the oven for 10 minutes.

Remove, let cool serve and enjoy!
