Use your hands to mix the slaw, scrunching the vegetables as you mix. This will help break them up and allow them to absorb the dressing.

Equipment Needed

Measuring cups and spoons, knife, cutting board and a large bowl


Slice the kale, cabbage and red pepper as thinly as possible. Grate the carrot, finely chop the green onions and place all of vegetables into a large bowl.

Add the pumpkin seeds, sunflower seeds and hemp hearts.

Dress with the lemon juice, olive oil, xylitol and season to taste with salt and pepper. 

Mix thoroughly and let rest in the refrigerator for one hour before serving.
