For this method, it's better for two people to share one thick steak then to cook two thin cuts.

Equipment Needed

Baking sheet with a wire rack, tongs, cast-iron pan, knife, cutting board and a remote thermometer.

Instructions

Preheat the oven to 225°. Let the steak come to room temperature (approximately 20 minutes) then place it on a baking sheet with a wire rack.

Season the steak liberally on both sides with steak spice and place the thermometer probe in the middle of the steak at the thickest part. Place the pan in the oven until the steak reaches an internal temperature of 124°. Remove the pan from oven and let it rest 10 minutes.

Next its time to sear the outside of the steak.

Preheat the cast iron grill pan until maximum temperature is reached. Lightly brush the steak with oil and place it on the pan. Sear the steak on all sides until a deep golden crust has been achieved (about two minutes per side).

Transfer the steak to a cutting board and let rest 10 minutes. Slice into thin strips and enjoy.
