Prepare this dish ahead of time and bake it when you're ready to serve.

Equipment Needed

Measuring cups and spoons, sauté pan, knife, cutting board and a casserole dish


Preheat the oven to 375°.

Heat a sauté pan over medium-high heat. Add the garlic butter and allow it to melt. Once melted, add the sliced mushrooms and sauté for approximately 10 minutes or until the mushrooms are completely cooked. Season with salt and pepper, add the flour and continue to cook for an additional minute. 

Add the coconut milk and vegetable stock, combine thoroughly and bring the mixture to a simmer, allowing the sauce to thicken.  

Place the frozen beans in a glass or ceramic baking dish, top with the mushroom sauce and stir. 

Bake the casserole for 35-45 minutes. It should be slightly browned on top and the sauce should be thick and bubbly. 

Top with French fried onions (which can be found in the salad dressing section at most grocery stores) and serve.
