Use orange segments if you don’t like grapefruit.Equipment Needed
Measuring cups and spoons, knife, cutting board, mixing bowl, whisk, 4 250 ml mason jars and a ladle
Instructions
In a mixing bowl, combine the xylitol, Vega protein powder, chia seeds, ginger, vanilla, coconut milk and almond milk.
Whisk vigorously for 2 to 3 minutes and transfer to the fridge to set (approximately 2 hours), stirring every 30 minutes.
Using a knife, peel and segment the grapefruit.
When the pudding has set, transfer to four 250 ml mason jars and top each portion with 1/4 of the coconut flakes and 1/4 of the grapefruit segments.
Enjoy immediately or store in the fridge for up to a week.
