Make sure to combine the date paste with the oats while they're still slightly warm to melt properly.

Equipment Needed

Measuring cups and spoons, food processor, baking dish, baking sheet, knife, cutting board and a large mixing bowl


Preheat the oven to 375°.

Add the almonds and pumpkin seeds to food processor and pulse for 10 to 15 seconds. 

Empty the food processor onto the baking sheet and add the oats.

Mix thoroughly and place in oven for 15 minutes. 

While the oats bake, combine the dates, vanilla, salt and maple syrup in the food processor and purée into a smooth paste. 

Remove the oats from the oven and combine them in a large bowl with the date paste.

Once thoroughly combined, press the mixture into a baking dish and freeze for 30 minutes.

Once set, cut into 12 bars with a knife, serve and enjoy.
