You can use bocconcini cheese instead of buffalo mozzarella.

Equipment Needed

Measuring cups and spoons, knife, cutting board and a food processor or blender.

Instructions

Place the basil leaves and 1 cup of arugula into a food processor with the olive oil, balsamic vinegar and sea salt and blend until smooth.

Slice the roma tomato and vine tomato into 1/4" thick slices and cut cherry tomatoes in half.

Tear the mozzarella cheese into bite-size pieces.

On a serving platter, arrange a bed of arugula (using the remaining cup).

Arrange the tomatoes on the platter so that they are minimally overlapping.

Evenly disperse the cheese pieces, drizzle with the dressing and serve.
