QUICK TIP

If you don't have a small cast-iron pan, you can wrap the brie in aluminum foil and place it directly on the barbecue. Follow the same process to finish.

Equipment Needed

Measuring cups and spoons, barbecue, medium-sized skillet, small-sized skillet, knife and a cutting board

Instructions

Dice the red pepper, red onion, jalapeño and the pear into quarter inch cubes and set aside. 

Heat the grill on high and place a medium-sized skillet directly on the grill and let it get hot (approximately 2 minutes).

Melt the garlic butter and add the red pepper, red onion, jalapeño and pear and season with salt and pepper. Cook for 5 minutes or until onions are slightly brown, and pear is tender.

Remove the skillet from the grill and set aside. 

In a small skillet, make a bed of sliced green onions and place the brie on top.

Slice the top layer of outer skin off the brie and discard.

Place the brie on the barbecue over high heat and cook for 5 minutes.

Remove the brie from the barbecue and top with the pear salsa.

Serve with crackers, grilled bread and/or vegetables.
