These skewers are great to serve with a meal or on their own as an appetizer. With a flavourful marinade they are extremely easy to make and customize. Create them with all veggies or use chicken, as they are a great option for those with any dietary restrictions.

Measuring cups, a knife, cutting board, mixing bowl, bamboo skewers, and a Ziploc bag.
Vegetable skewers (4 skewers):
1 green zucchini
1 yellow zucchini
2 cups mushrooms
1 red pepper
1/2 cup GoodLife Kitchen souvlaki marinade
Chicken skewers (4 skewers):
2 free range chicken breasts
1/4 cup of GoodLife Kitchen souvlaki marinade
Cut the zucchini and peppers into large chunks and slice the mushrooms in half. Thread vegetables onto bamboo skewers, cover with marinade and let sit in the fridge for one hour. Grill them over medium-high heat for 10-15 minutes.
Cut the chicken breast into large chunks, place into a bowl and combine with the marinade. Transfer the mixture into into a Ziploc bag and refrigerate overnight.
Thread pieces of chicken onto bamboo skewers and grill over medium-high heat for 12-15 minutes.
Serve with our delicious GoodLife Kitchen tzatziki sauce.
